Spicy Bacon Guacamole Venison Burger

It’s time to whip up a burger worthy of summertime by topping it off with some fresh, spicy bacon guacamole. That’s right, bacon. Unlike most folks who cook wild game, I usually don’t use bacon because it tends to overpower all the other flavors. But when you add bacon to guacamole something magical happens, so I’m making an exception.

Serve with fries, mix it up with some hasselback sweet potatoes or try a healthier route with grilled zucchini spears. The guacamole recipe can easily be doubled for a dip with tortilla chips or paired with another guac-worthy recipe

Guacamole Ingredients:

  • 2 avocados halved, seeded and peeled
  • 1 clove garlic, minced
  • 1 jalapeño, minced (for less heat remove seeds, ya baby)
  • 1 Roma tomato, diced
  • 1/2 medium white onion, diced
  • 1 lime, juiced
  • 1/2 cup cilantro, finely chopped
  • 2 tbsp. real bacon bits (you’re welcome)
  • 1/2 tsp. kosher salt

Guacamole Directions:

  1. Place the prepared avocado in a large bowl
  2. Mash using a potato masher, fork or wooden spoon
  3. Fold in the onions, tomatoes, cilantro, garlic, lime juice, kosher salt and bacon bits
  4. Cover with plastic wrap and refrigerate

 Burger Ingredients:

  • 1 – 1 1/2 lbs ground venison
  • Kosher salt, to taste
  • Coarse black pepper, to taste
  • 4 ciabatta buns
  • 1 tbsp. butter
  • 4 slices pepper jack cheese

Burger Directions

  1. Preheat grill to 450
  2. Split ciabatta buns in half and butter each of the split sides and set aside
  3. Patty ground venison into 1/3 lb burgers and dimple the center of each patty with thumb
  4. Season each side with kosher salt and coarse ground pepper
  5. Place burgers on hot grill. Cook for 5-7 minutes on each side or until the desired temp is achieved
  6. Remove from heat, add pepper jack cheese
  7. Allow burgers to rest while toasting the buns
  8. Toast ciabatta on the grill or in toaster oven until golden brown
  9. Place burger on toasted bun and top with guacamole
